OYSTERS

The Art of the Bill Shucking

Oysters are our specialty! We meticulously shape the shells into three distinct styles to suit any consumers fancy. Our deep water longline methods allow the oysters to feed at a specific level in the water column to optimize growth and showcase particular flavors. We love the briny flavors of the bay, and growing native species in their natural environment. Salt Water Farms focuses on the subtleties of oyster farming because that’s what makes the difference, always innovating, and bringing you the finest oysters we can grow.

In Season: Boutique crop harvested in time for Thanksgiving!

Being at the forefront of deep water aquaculture in the Ocean State is a bit easier aboard the F/V Thomas D. Royal. Our first season (2015) tending oysters in Rhode Island Sound produced a remarkable bi-valve. We really had little idea how the oysters would fair suspended in 70 feet of salty sea. One mile off of Land’s End, Newport these oysters feast and mature in turbulent waters.  Grown at low densities and tumbled frequently, this farm site is producing a boutique harvest of 2 ½ -3” deep-cupped, hard-shelled, briny bliss with a sweet finish! Taste the deep water difference!
