At Salt Water Farms we refer to Umami’s as the cocktail oysters. These are the slow growers that take 4 years to reach their diminutive size of 2 ½” – 3” and soak up all of the fine flavors that only Narragansett Bay has to offer. Umami’s have a more robust lipid profile because of their age creating a true “taste sensation”. The perfect starter oyster because of its size it is also the favorite of connoisseurs.
